Pacific saury
Pacific saury (latin name: Cololabis saira) is a pelagic fish, appearing in the North Pacific Ocean, from Korea and Japan to the Gulf of Alaska and southward to Mexico.
Pacific saury is a popular fish in many Asian cuisines and is also commonly used as commercial fishing bait. The fish has high fat content which brings strong flavor for cooking. It also has shinny skin which reflects sunlight in seawater to attract tuna in commercial fishing.
It is caught in autumn/winter season by vessels from Taiwan/China/Japan/Korea/Russia. Taiwan vessel’s production is on top position in either quantity or quality. Pacific saury is frozen onboard right away after catching and graded from #0~#5 by Taiwanese vessels.
